Pavlova with berries
Pavlova is a summer dessert made with meringue, cream, and fruit, originating in Australia and New Zealand. It is named after the Russian ballerina Anna Pavlova. The meringue should be crispy on the outside and soft on the inside thanks to the cream and fruit filling. The result is a soft, refreshing dessert to share during the warmer months.
Ingredients:
- For the meringue shell
- Egg whites 150 gr.
- Sugar 300 gr.
- Cornstarch 1 teaspoon
- To garnish:
- Fresh cream 250 ml
- Icing sugar 70 gr.
- Mixed berry salad 4 fruits to taste
Preparation:
Method
In a stand mixer, whisk the egg whites and 1/3 of the sugar. Gradually add the remaining sugar while mixing.
Shape the shell using a spatula or a piping bag with a wide tip.
Bake at 110°C (230°F) until completely dry.
Let cool.
To garnish:
Whip the cream with the powdered sugar.
Place the cream inside the shell.
Garnish with the drained berry salad.
