Crumbly passion fruit biscuits
A simple cookie to make, yet incredibly rich in flavor and freshness. Perfect for summer.
Ingredients:
- 00 flour 350 gr.
- Starch 150 gr.
- Butter 200 gr.
- Fresh cream 100 ml.
- Almond flour 100 gr.
- 160g cane icing sugar
- 1 pinch of salt
- Natural passion fruit gr. 100
Preparation:
Method
To make these crumbly passion fruit cookies, follow the procedure below.
In a stand mixer, mix the flours, sugar, cream, softened butter, and salt. While mixing, add the natural passion fruit.
The resulting dough should be soft, roll it out between two sheets of parchment paper and refrigerate for 3 hours.
Then, roll out the pastry further, which will still be soft, until it is 3 mm thick and cut out using small round molds.
Bake at 170°C for about 15 minutes or until golden brown.
If using double-concentrated passion fruit juice, reduce the amount to 50 g and add 50 g of water.
