Sorrento lemon sorbet with no added sugar
The Sorrento PGI lemon has unique characteristics, from its persistence to its sweetness. The result is a simple yet distinctive sorbet, characterized, in this case, by a recipe with no added sugar, developed for Rogelfrut by master Alessandro Racca.
Ingredients:
- 1000 g. SORRENTO PGI LEMON JUICE
- 1750 g WATER
- 800 g MALTITOL
- 195 g ERYTHRITOL
- 155 g INULIN
- 20 g COLD FRUIT STABILIZER
Preparation:
Method
Mix the powders evenly, dissolve them in water at 35°C, let stand for 2 minutes, then add the freshly thawed juice. Mix for at least 2 minutes and stir as usual.
Blast chill properly and serve in a display case or well.
