Lychee and vanilla sorbet
Lychee is a precious fruit with a taste of the Orient. The combination with vanilla is unique and special. Lychee and vanilla sorbet surprises with its delicate flavor and unique sweetness. A recipe created for Rogelfrut by master chef Alessandro Racca.
Method
Method: Weigh the ingredients, mix the dry ingredients with warm water to create a smooth syrup, then add the lychee puree and vanilla bean seeds. Let it rest for at least 30 minutes in the refrigerator at +4°C.
Chill as usual.
Blast chill and serve in a display case or well.
Tips: You can also infuse edible flowers such as jasmine, geranium, or rose. In this case, add at least 15-20 g of petals per kg of mixture and let it infuse for at least 12 hours.
Decorate with the same glittered flowers.
