Ingredients:
- SUCROSE 470 gr.
- DEXTROSE 230 gr
- INVERT SUGAR 125 gr
- MILK POWDER 90 gr
- BASE 50 MILK 175 gr
- MILK 3.5% FAT CONTENT 3345 gr
- PIEDMONT HAZELNUT PASTE TGR 565 gr
Preparation:
Method
Mix the powders with the milk until smooth and pasteurize as usual.
After pasteurization, add the hazelnut paste to the mixture and stir.
Blast chill and serve in a display case or well at -12°C.
Garnish with chopped hazelnuts, whole hazelnuts, or caramelized chopped hazelnuts.
