Blueberry, raspberry, strawberry, and yuzu sorbet is a delightful twist on berries, with a hint of citrus. Yuzu is an Asian citrus fruit with lingering notes of mandarin and grapefruit, capable of lending a refreshing twist to even the most classic recipes.

Ingredients:
- SWEETENED BLUEBERRY PUREE 10% 915gr
- 10% SUGAR-FREE RASPBERRY PUREE 730g
- STRAWBERRY PUREE WITH 10% SUGAR 730g
- WATER 1832 gr
- WHITE CANE SUGAR 478 gr
- FRUIT BASE 50 182 gr
- GLUCOSE 38 DE 55 gr
- YUZU JUICE 75 gr
Preparation:
Method
Mix the powders with water until smooth and pasteurize as usual.
Add the purees and juice, blend for at least two minutes, and stir.
Blast chill and serve in a display case or well at -12°C.
