Avocado and lime sorbet

Ingredients:
- SUCROSE 700 gr
- DEXTROSE 200 gr
- GLUCOSE 325 gr
- BASE 50 150 gr
- AVOCADO 2000 gr
- LIME JUICE 250 gr
- WATER 1375 gr
Preparation:
Method
Mix the powders with water until smooth and pasteurize as usual.
Put the avocado in the lime juice and refrigerate.
Add the resulting puree to the mixture and stir.
Blast chill and serve in a display case or well at -12°C.
