Apple & Yuzu Sorbet
Apple and yuzu sorbet, the delicate flavor of apple meets the bold flavor of yuzu. Perfect for summer.
Ingredients:
- Sucrose 484 g
- Dextrose 132 g
- Glucose 212 g
- Base 50 fruit 120g
- Apple Puree 1600 g
- Yuzu juice 160 g
- Water 1292 g
Preparation:
Method
Mix the powders until smooth, dissolve them in water, let stand for 1 minute, then add the freshly thawed apple puree and yuzu juice.
Blend for at least 2 minutes, then stir as usual.
Blast chill and serve in a display case or well.
