Pineapple, passion fruit and ginger sorbet
Sweet and tangy pineapple sorbet. Passion fruit perfectly complements the pineapple flavor. Perfect for summer.
Ingredients:
- Pineapple puree 250 g
- Concentrated passion fruit juice 100 g
- Ginger juice 10 g
- Water 425 g
- 150 g white cane sugar
- Fruit base “50” sdl 50 g
- Glucose 38 of 15 g
Preparation:
Method
Mix the powders evenly, dissolve them in water at 45°C, leave to rest for 1 minute and add the freshly defrosted purées and juice, mix for at least 2 minutes and stir as usual.
Chill properly and serve in a display case or ice cream tub.
