Monte Bianco our way
Montblanc is a French dessert made with chestnuts and whipped cream. The recipe is simple to make, and the result is impressive, regardless of the version you choose. We offer our own.
Ingredients:
- Peeled chestnuts 600 g
- Fresh cream 900 g
- Icing sugar 100 g
- Sucrose 100 g
- Whole milk 200 ml
- 1 vanilla bean
- FOR DECORATION AND ASSEMBLY:
- Meringue disc diameter 18
- Meringues
- Marrons glacés
Preparation:
Method
Whip the cream until stiff with the icing sugar.
Place the chestnuts, milk, sugar and vanilla pod in a saucepan and simmer for 15 minutes.
When the chestnuts have absorbed all the milk, remove them from the heat and mash them with a potato masher.
Place the meringue disc on a plate and cover with a layer of chestnut purée. Rogelfrut
Mix 300 g of cream into the cooled chestnut purée and form a mound.
Using a piping bag, decorate with swirls of cream until the entire surface is covered.
Decorate with meringues and marrons glacés.
