Nutritious, low-calorie and thirst-quenching drinks. Smoothies are the real must-have of the new season. Here’s how to make them at their best.
A smoothie is the ultimate vitamin-packed fruit and vegetable drink. It is not a milkshake or a shake: it is a purée with a more liquid consistency that is prepared with a professional blender.
Smoothies are thicker than milkshakes, less dense than purées and less cold than sorbets.
A smoothie is… a smoothie!
This drink, with its pleasant and novel texture, does not usually contain ice and is not milk-based. But the recipes are as varied as you like, depending on your choice of ingredients and requirements.
If you have a bar or café, you can stick to the classics, improvise, follow our recipes or experiment according to your customers’ tastes.
First of all, which fruit should you choose?
There are no limits and you can use fresh fruit but, of course, frozen fruit too, to avoid waste, reduce preparation time and have a supply of quality raw materials throughout the year.
Blender, mixer or…?
To begin with, a mid-range blender will certainly do the job. It is a sustainable investment (€80-100, even online) that allows you to experiment and even blend frozen fruit. Of course, once you realise that your needs are more demanding, our advice is to choose a more powerful professional blender that will guarantee excellent performance during the busiest periods.
How to prepare smoothies
There are no special techniques to follow, except to take care when using the necessary equipment. Simply select the ingredients or pre-measured frozen fruit mixes, add a liquid (apple juice, orange juice, yoghurt, iced tea, ice cream, milk and sugar, soy drink, etc.), non-alcoholic or alcoholic (perfect for creating excellent frozen cocktails) and start the blender for 30-40 seconds, depending on the desired consistency.
Variations
The possibilities are endless! You can use our recipe book for some ideas and have fun playing with textures and flavours. You can flavour your smoothie by adding spices (ginger, cinnamon, turmeric, lemongrass, etc.), sweeten it to taste (honey, fructose, stevia, etc.) or add crunchy elements (cocoa nibs, sugar sprinkles, puffed quinoa, chopped hazelnuts, chocolate chips, etc.).
What about decoration?
You can obviously make your smoothies even more appealing by decorating them with dried fruit (chopped hazelnuts, chopped almonds), grated coconut, lemon or orange zest, fruit coulis.
