Lemon, lime and ginger sorbet
Lemon, lime, and ginger sorbet is perfect for any occasion. A simple yet sophisticated recipe, created for Rogelfrut by master chef Alessandro Racca.
Ingredients:
- 150 g. SORRENTO PGI LEMON JUICE
- 50 g. LIME JUICE
- 10 g. GINGER JUICE
- 500 g. WATER
- 200 g WHITE CANE SUGAR
- 60 g FRUIT BASE “50” SDL
- 12 g GLUCOSE 38 de
- 18 g SOLUBLE FIBER
Preparation:
Method
Mix the powders evenly, dissolve them in water at 38/42°C, let stand for 10 minutes, then add the freshly thawed juices. Blend for at least 2 minutes and stir as usual. Chill properly and serve in a display case or well.
